Ultimate Mushroom VeggieLoaf

- 2 large portobello mushrooms

- 1 can of Chick peas, drained

- 1 can of black beans, drained

- 1 small head of broccoli chopped

- 1 small head of cauliflower

- 1 small zucchini

- 1 large chopped onion

- 3 large celery stalks

- 1 and a 1/2 Chopped red pepper

- Large Oat Flakes ( how much you need is going to depend on how much sauce you add)

- 3/4 cup Apple sauce

Zesty Ketchup - 1 cup relish

- 2 cups ketchup

- 1/2 cup hot sauce ( only add of you like a little heat)

- 3 table spoons soy sauce

- 3 table spoons Worcestershire

- 2 table spoons brown sugar, garlic powder

- 1 table spoon black pepper and sea salt

- I also added about a tea spoon of chili pepper and cayenne pepper (I like it spicy)

1. Pre-heat oven to 350F

2. Make your Zesty sauce in a bowl - I free handed most of the ingredients for this sauce and used it when I really loved the taste (I tasted it through each ingredient)

3. Put the chick peas, black beans and broccoli in your blender and mix together - I also added my apple sauce to this mix

4. Mix the mushroom, zucchini, onion, celery, cauliflower and red pepper in a large bowl

5. Add the blender mix to your chopped veggies

6. Mix in 2 cups of the Zesty ketchup sauce

7. Mix in Oats until the mixture holds together

8.Use parchment paper or put olive oil on a large -deep sided pan

9. Put the mixture into pan and make sure you press down the top so it is firmly packed

10. I like a little crust on the top so I also added oats as a layer on top

11. Put in the oven on the middle rack and cook for 20-25 minutes

12. Use another cup or so of the zesty ketchup on the top of the veggie loaf and put back into the oven for another 20-25 minutes.

You can take it out again after 10 minutes to add another layer of the zesty ketchup if you would like or save the extra sauce for when it is cooked and add at the time of eating.
