Vegan Quinoa Salad

We use this recipe to make enough quinoa salad for 2 people to eat 2-3 times in a week. 3 Cups quinoa cooked 1 medium onion finely chopped 1 to 2 medium tomato chopped (depending on how much you like tomato)

1 to 2 medium red, yellow or orange bell peppers Fresh Parsley to taste Juice from 1 medium lemon to taste

1. First cook the 3 cups of quinoa. 2. Mix quinoa, onion, tomato and pepper together 3. Add parsley and lemon juice to taste You can also add in a little salt and pepper if you desire One thing we like to do with this salad to add an extra boost for the day is to a lunch is to add it into another salad. We will make a spinach and baby greens salad and add this on top for a bit of added protein and carbs to get you through a work out or long day!
